There pasta with almonds and sausage it is a rich dish with unexpected textures, but very quick to prepare and very tasty. To do this I prepared a kind of almond pesto fast fast (great idea for other recipes too!). You can vary a bit, perhaps by adding thyme, pepper or zucchini: don’t worry, it will remain a tasty and quick first course, perfect for any occasion 😉

Procedure for preparing the pasta with almonds and sausage

First of all, put a pot full of lightly salted water on the stove: when it boils, drop the pasta.
Then start cooking the sausages in a non-stick pan, let them brown, then chop or crumble them and finish cooking them like this, turning often to brown them evenly.

In the meantime, put the almonds in a blender (keep some aside for decoration), Parmesan, garlic, oil, salt to taste and 1 ladle of pasta cooking water and blend until you get a smooth sauce.

Drain the pasta al dente, mix it with the almond pesto and then add the crumbled sausage.

The pasta with almonds and sausage is ready: decorate with a few pieces of almond and serve immediately.
